strawberry & Cream Cheese turnovers
There's truly nothing better than a platter of freshly-made turnovers! The golden, flaky pastry dough is filled with fresh strawberries spiced with cardamom and a sweet, tangy cream cheese filling
This turnover recipe uses pre-made puff pastry and of fresh ingredients for bright pastries!
Prep 9oz of strawberries by removing the stem and cutting each strawberry into eighths.
Transfer strawberries to a pan. Add ¼ cup sugar, ½ tbsp lemon juice, ¼ tsp cardamom, ¼ tsp nutmeg, pinch of salt
Add 1 tbsp corn starch to ¼ cup cold water. Pour the slurry into the pan. Simmer until they soften.
Combine 8 oz cream cheese, ½ tsp vanilla extract,1 tbsp sour cream, ¼ cup confectioners' sugar in a bowl
Beat together until smooth and creamy. Transfer to a piping bag
Working with one sheet at a time, cut the 16oz of defrosted puffy pastry into 8 rectangles.
Pipe about 2 tablespoons of cream cheese on to the pastry, leaving space on the side for sealing
Add the strawberries in a single layer
Seal with another piece of puff pastry.
Sprinkle with granulated sugar. Cut a slit down the middle
Bake in the oven at 425° F for 30 mins until golden brown
Enjoy for breakfast with a hot cup of tea
Or for dessert with a scoop of Blueberry Pie ice cream
