This small batch homemade chai spice is the perfect blend of green cardamom, black peppercorn, ginger, cinnamon, cloves, mace, nutmeg, and star anise. Add it to black tea for a fragrant cup of masala chai or to your fall baked goods.
– 20 g green cardamom
– 15 g black peppercorn
– 15 g ground ginger
– 15 g cinnamon
– 5 g cloves
– 2 g mace, optional
– 1 g nutmeg
– 1 g star anise, optional
Add chai spice or the lightly smashed whole spices and black tea leaves to a pot of boiling water. Allow the tea and spices to release flavor

SIMMER WITH MILK
Pour in the milk of your choice and bring it to a rolling boil to get ready for the double boil

Bring the chai to a boil, so that it starts aerating and bubbling to the top. Remove from heat until the bubbles come down. Bring it to a boil again. Remove from heat a 2nd time until the bubbles go back down.

Strain and serve
Simmer the chai until desired consistency and color. Remove from heat. – Strain the chai with a sieve into a tea pot. Mix in the sugar and serve with Parle-G biscuits.
