Rice Kheer is especially wonderful for weddings and during Diwali, the Festival of Lights!
The ingredients you''ll need:
Rinse 1/4 a cup of rice until the water runs completely clear. Then, soak it in water for up to 30 minutes to allow for n even cook.
Dry roast the rice in ghee for a minute to prevent the rice from getting too mushy while it boils.
Pour in 4 cups of milk and simmer on low to medium heat, being sure to stir in intervals, until the milk reduces by half.
Add 2 tablespoon of crushed almonds and cashews, 1 oz golden raisins, ¼ cup sugar, 1 tablespoon thin unsweetened shredded coconut and ¼ teaspoon cardamom powder
Simmer until the desired consistency is reached. Garnish with saffron, rose petals, and chopped pistachios.
